aloo ki simple recipe


 Allo, or aloo, is the Hindi word for potatoes. Here's a simple recipe for aloo ki sabzi, a popular Indian potato dish. This recipe serves 2-4 people.

Ingredients:

  • 4 medium-sized potatoes, peeled and cubed
  • 2 tablespoons oil (vegetable or mustard oil works well)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds (optional)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1/2 teaspoon garam masala (optional)
  • Fresh coriander leaves for garnish (optional)
  • Water
  • Lemon juice (optional, for a tangy twist)

Instructions:

  1. Heat the oil in a pan or kadai over medium heat. You can use mustard oil for an authentic flavor, but make sure to heat it until it starts smoking and then let it cool down slightly before adding other ingredients.

  2. Add cumin seeds and mustard seeds (if using) to the hot oil. Let them sizzle for a few seconds until they start to splutter.

  3. Add the cubed potatoes to the pan and stir well to coat them with the spices and oil.

  4. Sprinkle turmeric powder, red chili powder, and coriander powder over the potatoes. Mix everything together until the spices are evenly distributed.

  5. Season with salt according to your taste.

  6. Reduce the heat to low, cover the pan, and let the potatoes cook. Stir occasionally to ensure even cooking. If the potatoes start to stick to the pan, you can add a few tablespoons of water to help them cook.

  7. Cook the potatoes until they are tender and easily pierced with a fork. This should take around 15-20 minutes.

  8. If you like, you can sprinkle garam masala over the cooked potatoes for extra flavor. Mix well.

  9. Garnish with fresh coriander leaves and a squeeze of lemon juice if you'd like a tangy kick.

  10. Serve your aloo ki sabzi hot with chapati, rice, or any Indian bread of your choice. It also pairs well with yogurt or raita.
